Bake a better breakfast!

We have asked our resident health and wellbeing guru Jamie ‘WICKS’ Broadley to share with us some useful tips and recipes to make eating healthy quick, fun and easy!

Breakfast is often the hardest meal of the day to get right when we’re rushing out the door trying to remember which sports kit the kids need, who is picking up the dry cleaning and where we left our jacket last night! It is easy to go for a quick fix which often means high sugar and high carbs.

This is one of my favourite breakfast recipes that you can make in 20 minutes and will give you a breakfast or snack option for every day of the week. A serious easy win!

Low carb breakfast muffins

Take some of your favourite veg, (I do mine with peppers, onion, broccoli, spinach and tomatoes), chop it up and fry in some coconut oil or butter until it is soft. Whilst this is frying, beat some eggs together and add a touch of seasoning and any herbs you wish. Then simply combine the two and pour out into a greased muffin tray (use muffin cases to save on washing up!) and pop in an oven at 200C for 15-20 minutes. Job done, you now have a delicious and nutritious breakfast or snack for the week!

You can then start to take this basic recipe in loads of different directions. I like to add bacon or chorizo to up the protein content or you could get creative with the spice rack and make seasonal variations.
